For Fran González, founder of Gonzalez&Co, the product is everything: "We make everything in-house because real food tastes better." And we love working with operators like him. So we sat down with the team to learn more about Gonzalez and hear what keeps them with us after all this time.
What is Gonzalez&Co?
As Arola Domenech (COO) of Gonzalez&Co explains:
"González & CO started from an idea Fran had during his travels — he spent a year and a half in Australia, where he discovered burritos and fell in love with them. In 2016 he opened the first restaurant in the Barrio de Gracia, in Barcelona. Since then, we've grown to seven locations, two delivery kitchens, and a presence in three cities: Barcelona, Madrid, and Valencia."
They stand out above all for their commitment to completely fresh ingredients, cooked using Mexican recipes adapted to a Mediterranean style. Everything — the beans, guacamole, meats, and vegetables — is prepared daily at each restaurant, with no frozen shortcuts.
They are the creators of the best-selling chicken burrito in Spain. Their burritos, nachos, quesadillas, and enchiladas are already a hit across three Spanish cities, celebrated for their bold flavour and craft. They offer a wide range of modifiers so every customer can build their perfect combination — from dedicated meat-eaters to committed vegans.

What challenges were you facing at Gonzalez & Co before you found Last.app?
The main issue was that orders from our delivery platforms weren't integrated with the POS — so we had to enter every order manually. That was a real time drain because it meant repeating the same process twice, and as you'd expect, human error crept in along the way.
We had tried to integrate our previous software with the delivery platforms but never managed to get it working.
Why did you decide to trust Last.app and try the software?
We'd heard great things about you, and from the moment we made contact, every interaction with Last was warm and professional. They had answers to all the technical challenges we raised, and they adapted to some very specific requirements in our operation and the hardware we use. Honestly, until then it hadn't been easy to find software flexible enough to fit everything we needed.
What results did you get with Last.app?
Full integration of the delivery platforms with the POS, while keeping the same operational flow and hardware we already had in the restaurant. We even managed to sort out some labelling details we'd never been able to fix before. We also put in place operational improvements that became possible once you automate the process of passing delivery orders through. I think in that sense it was mutual — our needs helped push Last's product forward in a very efficient way.
How did Gonzalez & Co. change after Last.app?
We're clearly more efficient when it comes to processing orders. That has had a direct impact on reducing human error — a task that used to depend entirely on a person is now fully embedded in our operation, running smoothly and reliably.
Bringing Last.app in has allowed us to grow faster and with much more confidence, because we can test different menu models across different locations.
We're a company that works a lot through trial and error, and the flexibility to update the menu and all the POS components ourselves — plus the ability to run specific offers and promos — has made that approach work much better. It helps us learn something new about our own business every single day.
