Fat Veggies

When you have a menu that changes constantly, you need a tool that moves with you. With Last.app, updating items is fast, easy, and never disrupts service.

Fat Veggies was born from passion. From a kitchen deeply rooted in local produce, seasonality, and the land. Here, vegetables are not a side dish — they are the main event. The offering is plant-based, artisanal, ever-changing, and very much alive. And that, in the day-to-day of a restaurant, means constant challenge.

Working with a dynamic menu, local suppliers, and a whole-ingredient philosophy demands flexibility, speed, and tools that support the work, not slow it down. That is where technology becomes a key ally — so that creativity does not collide with operations.

Fat Veggies is a project where everything shifts: the produce, the menu, the weather, the inspiration. To sustain that rhythm without losing control or efficiency, they needed a system that was agile, intuitive, and reliable. That is where Last.app comes in.

Juan Martini, owner and chef at Fat Veggies, shares how technology has become an essential part of the restaurant's daily operations.

You work with local produce and sustainable practices — what role does technology play in a restaurant like yours?

In our case, technology is fundamental because our offering is very dynamic. The menu changes constantly, and if you do not have tools that are easy to use, every modification becomes a burden and ends up slowing operations down.

"If the system is complicated, the tendency is to stop changing things".

We need software that keeps up with that constant movement and lets us adapt quickly without the management side becoming an obstacle.

Before implementing Last.app, what operational needs or problems did you have?

We were mainly looking for support and ease of use. In a restaurant, the POS is a critical point — any failure has a direct impact on service.

"When you depend on a system this much to take payments and serve customers, any malfunction is extremely critical".

The technical support and customer care at Last.app — much closer and more responsive — was one of the key reasons we decided to make the switch.

How has managing the restaurant improved since you started using Last.app?

Last.app has brought us fluidity and peace of mind. Being able to change menu items or adapt the offering quickly and intuitively fits perfectly with the way we work.

"Our offering is very dynamic and Last is very intuitive. Changing things is easy and fast".

That lets us focus on cooking, experimenting, and looking after the produce — without the tool getting in the way.

In a sector with high staff turnover, how does Last.app affect the team and the customer experience?

When the team has a tool that works well, everything becomes easier. Operations run smoother, staff work with more confidence, and service flows better.

"The front-of-house team has a tool that is fluid, dynamic, and fast — and that shows in the service".

In the end, a good experience for the team translates directly into a better experience for the customer. And at Fat Veggies, that matters above all.

Hoy en día el delivery tiene mucha fuerza, el 80% de nuestra venta es delivery. Entonces, necesitas un TPV que esté integrado y que sepa tratar con ellos. Que todo esté correcto. Eso es muy importante.
