Miss Sushi

Today delivery is massive — 80% of our sales come from delivery. You need a POS that's fully integrated and handles it properly. Getting that right is non-negotiable.

For 18 years, the brand set out to democratise a product that was then expensive and out of reach, turning it into an accessible, fun and flavour-packed experience. Today, with 35 locations across Spain and Andorra and a strong commitment to delivery, Miss Sushi has grown with its feet firmly on the ground — without losing its identity.

But behind that relaxed experience lies a complex operation that demands precision, control and agility. That is where technology becomes a critical ally.

Miss Sushi did not get here by accident. After years of evolution — from pen and paper to systems that could no longer handle a multichannel business — the brand needed a solution that would connect its entire operational ecosystem. That turning point came with Last.app.

Yolanda Labella, Marketing Director at Miss Sushi, shares what that change has looked like.

What did you need before working with Last.app?

We have been through many years of evolution. Miss Sushi started out completely manual, then moved through different POS systems that never gave us a complete picture of the business. We were missing the connection between systems, full control over delivery, and a tool that could truly cover and integrate with everything we needed.

"We had tried other systems that were not 360. They did not connect everything".

With the volume we handle — especially in delivery — that was no longer workable.

How has Last.app changed the day-to-day operation?

Last.app is the heart of our operation. It is the central POS that all information flows through, and everything is connected to it: stock, digital QR menus, the online store and delivery platforms.

"We could not work without it anymore".

If something sells out, it disappears from the digital menu automatically. Everything is automated and that saves an enormous amount of time and prevents errors.

How does Last.app look from head office versus the restaurant floor?

From head office, Last.app gives us something essential for a brand with many locations: full control and real-time changes. With everything connected, any update to the menu, pricing or a product is managed centrally and rolls out automatically across every restaurant and channel.

"If we launch a new product or make a menu change, we do it once and it updates across every location".

On the restaurant side, that translates to calm and efficiency — especially in delivery. Everything stays in sync with the partners, eliminating errors, duplications and out-of-stock items slipping through.

Before, every change meant going through menus, platforms and systems one by one. Now the operation is far more agile and the team can focus on what actually matters: delivering great service and making sure the guest experience is excellent.

In a sector with high staff turnover and heavy delivery volume, what stands out about Last.app?

It is intuitive and easy to learn. We have very high staff turnover and we have never had complaints about the system.

"It is super intuitive — you pick it up straight away".

And for delivery, which represents 80% of our sales, it is essential. Not every POS integrates well with the delivery partners or handles that kind of order volume.

"We needed speed and reliability with Glovo, Uber and the other partners — and Last.app delivers that".

Miss Sushi...
